Mac and Cheese

Nothing says comfort food like Mac & Cheese! 🧀 Who else is in need of some delicious cheesy goodness? Try out this winning Recipe with Friends, family or just make a pot for yourself, 😁🤗 Guaranteed to make everyone smile and fill tummies with happiness, it’s the perfect way to start the weekend!

This delicious recipe should give you a good 4-8 bowls depending on your preferred servings.

Here’s what you will need

  • 2 cups whole milk
  •  4 tablespoons butter
  •  4 tablespoons flour
  •  1 pound elbow pasta. (Dried Pasta)
  •  1 pound grated cheese of choice – (try 2 or 3 types, strong cheese for cheese lovers)
  •   Bread crumbs
  •  Salt & pepper to taste (pinch)
  •  1 teaspoon dried mustard
  •  1/2 teaspoon paprika
  •  1/4 teaspoon cayenne
  • Garnish with basil, or use sliced tomatoes or whatever you prefer.

Method

Boil the pasta for the minimum time it reads on the package – (Firm on the bite, so its not soggy) Drain and put to one side.

Grate the cheese

Melt the butter in a pan over medium heat, then add in the flour and a pinch of pepper. Using a whisk, stir the flour into the butter until it is combined and has no lumps.

Keep mixing this around until it turns a light brown color for a few minutes over a medium heat. (keep stirring so it does not burn)

Once it’s brown stir in your preffered spices, once they’re combined, add the milk!

Once the milk is in, turn up the heat and let it boil for approx to minutes, makling sure you keep stirring till nice and smooth and it should thicken.

After 2 minutes turn down the heat to low but keep stirring, simmer for 2 more minutes then add the cheese a handful at a time until it melts then add more till all the cheese is in, make sure you keep stirring when adding the cheese.

Taste the sauce, and add more salt and pepper at this point, or any other seasonings you like.

Now add half of the Pastastir and add more of the pasta until you feel the proportion of pasta and sauce, dont worry if you still have pasta left over, (you can freeze any leftover pasta)

Garnish and Enjoy 😋 or…….

At this point you can choose to fill a baking dish sprinkle over the breadcrumbs and bake ffor 20 mins until the top is browned and crispy.
