All our favourite veggies and fruits are in season at harvest time, including Sweet Potatoes and Beetroot.
So, if a snack is all you are after or an accompaniment to a meal, try the below is easy and delicious.
And the best thing is you can choose any dip you fancy at the time, for now though, here is what we love.
Beets and Sweet Potato Fries with a Mayonnaise Dip.
1 Large Sweet Potato
2 large fresh beets
2 tablespoons of olive oil
Peel and cut the sweet potato in half, then into half-inch strips.
Place in a bowl and add 1 tablespoon of Olive Oil, a pinch of sea salt and pepper.
Toss to coat then spread onto a baking sheet with baking paper.

Add to the same bowl
Add 1 tablespoon of olive oil
Pinch of sea salt and pepper
Toss to coat then spread them on another baking tray with baking paper.
Bake uncovered for 20 – 25 minutes, turning once until tender.
Serve with the Mayo Dip (or your choice of dip)
